So what’s for dinner? That is a huge and highly-loaded question in our house.

This week has been filled with activity for us, and we’ve actually eaten out twice in a week. That is a big thing for our family because my husband doesn’t like to eat out. In fact, he’s pretty complicated as far as meals go. He’s sort of traditional and really doesn’t consider it a meal unless there is a meat involved. There are some other high-maintenance meal quirks he has, so sometimes it feels like meal planning is a total challenge. To combat the whole hair-pulling frustration, I’ve tried to be more organized and planned out in advance and have main dishes calendared through March at this point with very little repeating in any given month, and most weeks have a pretty good balance of proteins. I used to subscribe to about five different cooking magazines, but lately I’m constantly on Pinterest looking for new menu items to try to throw into the mix.
